Egg Noodles

  • 2/3 cup (100 grams) 00 flour (finely ground pizza flour)
  • 1 egg
  • 1 teaspoon olive oil
  • Splash of white wine or water
  • Sea salt (optional)

Mound flour with a small well in center (like a volcano). Crack egg into well. Drip olive oil and wine or water over the top. With fingers, mix ingredients together, gradually incorporating the flour. If necessary, add extra flour.

Roll out to desired thickness. Use pizza cutter or knife to cut into noodles.

Add noodles to hot water or soup to cook.

Ball of dough can be frozen for later use.
