Cupcakes:
- 3 cups cake flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 cup whole milk
- 1/2 teaspoon vanilla
- 2 tablespoons lemon zest
- 1/2 cup lemon juice, freshly squeezed
Preheat oven to 350 degrees, and prepare cupcake pans for 24 cupcakes.
Mix flour, baking powder, and salt. Set aside.
Cream together butter and sugar. Add eggs 1 at a time.
Mix in dry ingredients, milk, vanilla, lemon zest, and lemon juice. Mix thoroughly.
Scoop into cupcake pans. Bake approximately 20 minutes. Cool completely before frosting.
Frosting:
- 1 cup butter, softened
- 16 ounces cream cheese, softened
- 8 cups powdered sugar, sifted
- 2 teaspoons vanilla
Beat butter and cream cheese. Gradually add sugar, mixing thoroughly. Add vanilla. Beat until creamy. Frost cooled cupcakes.
