- Single pie crust
- 2/3 cup sugar
- 2 eggs
- 2 ounces unsweetened chocolate
- 1 teaspoon vanilla
- 1/3 cup butter
- 2/3 cup cream
- 2 teaspoons powdered sugar
- Whipped cream
Bake and cool a single pie crust.
Combine sugar and eggs in a saucepan. Cook over low heat, stirring constantly until temperature hits 160 degrees. Remove from heat, and add chocolate and vanilla. Stir until smooth. Cool to 90 degrees.
In a separate bowl, cream butter. Add cooled chocolate mixture. Beat on high for about 5 minutes.
In another bowl, beat cream. Add powdered sugar. Beat to stiff peaks. Mix in with chocolate mixture. Pour into crust, and cool for several hours. Top with whipped cream.
