- 3 1/2 cups flour
- 1 1/3 cups sugar
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4-6 medium ripe bananas, mashes (about 2 cups)
- 2/3 cup butter, softened (not melted)
- 1/4 cup milk
- 4 eggs
- 1/2 cup chopped walnuts (optional)
Combine 2 cups of flour, the sugar, baking powder, baking soda, and salt in large mixing bowl. Add bananas, butter, and milk. Beat with electric mixer on low speed until blended. Then beat on high speed for 2 minutes. Add eggs and remaining flour. Beat until blended. Mix in nuts with spoon.
Preheat oven to 350 degrees. Grease loaf pans. This recipe will make 2 large loaves (8″ by 4″) or several small loaves. (I prefer to make small loaves. They seem to bake through the center better.) Pour batter into greased pans. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 10 minutes. Remove from pans, and cool thoroughly on wire racks. When completely cool, wrap in plastic to store. This bread can be refrigerated for longer storage or frozen.
