- 1 cup butter, slightly softened
- 2 teaspoons vanilla
- 1 pound (4 cups) powdered sugar
- 1-2 tablespoons milk (as needed) (can substitute coffee in chocolate version, if desire
- (3/4 cup unsweetened cocoa powder, if making chocolate frosting)
Mix butter and vanilla at medium speed for about 2 minutes. Use spatula to scrape sides of bowl.
If making chocolate frosting, mix powdered sugar and cocoa in separate bowl.
Add powdered sugar to butter mixture. Drape clean towel over mixer to avoid a cloud of powdered sugar. Mix on lowest setting to incorporate sugar into butter for about 30 seconds. Stop the mixer and scrape sides of bowl with spatula. Mix at medium-high speed for 30-45 seconds.
Taste test, and check consistency. As needed, add milk 1 teaspoon at a time (and/or coffee, if preferred, in chocolate frosting).
