- 1 1/2 cups butter, softened
- 1 1/2 cups brown sugar, packed
- 2 eggs
- 1 cup molasses
- 5 cups flour
- 1/2 teaspoon salt
- 4 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- Sugar (to roll cookies)
Cream butter and brown sugar. Beat in eggs and molasses.
In separate bowl, mix flour, salt, baking soda, cinnamon, and ginger.
Stir dry ingredients into creamed mixture. Chill for at least an hour.
Roll dough into 48 3/4-inch balls. Roll each ball in sugar. Place on parchment paper on cookie sheet.
Bake at 350 degrees for 8-12 minutes. Cool on sheet for 2 minutes. Move to cooling racks to cool completely.
Cookies can be frozen.
