Greek Raisin Bread

  • 2 1/2 cups milk, scalded
  • 2 packages yeast
  • 1 teaspoon sugar
  • 1/2 cup warm water
  • 1/2 cup butter
  • 3 egg yolks
  • 1/2 cup sugar
  • 1 tablespoon sea salt
  • 8+ cups flour
  • 1 cup raisins or dried cherries

Scald milk, and set aside. Dissolve yeast and 1 teaspoon sugar in warm water. Add butter to warm milk. Add egg yolks, sugar, salt, and raisins to milk. Mix in flour and raisins. Knead. Let rise until double.

Cut dough in half. Cut each half into thirds. Form and braid 3 thirds into a loaf. Repeat for second loaf. Let loaves rise until light. Bake at 375 degrees for 45 minutes.
