- 1 yellow box cake mix*
- 1 cup apple cider
- 1/2 cup unsweetened apple sauce
- 3 large eggs, room temperature
- 1/2 teaspoon cinnamon
- 2 tablespoons coconut sugar (or brown sugar)
- 2 tablespoons melted butter (cooled somewhat before mixing with eggs)
- 2 teaspoons vanilla
*If preferred, the following ingredients can replace the yellow cake mix:
- 2 1/4 cups all-purpose flour
- 1 1/4 cups sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
Preheat oven to 350 degrees. Butter and flour bundt pan (or other size/shape of pan).
Beat together apple cider, apple sauce, and eggs. Add remaining ingredients, and blend well.
Pour into bundt pan. Bake for 40 minutes or until a toothpick comes out clean. Allow cake to cool for 20 minutes before removing from pan.
Cake can be finished with cinnamon and sugar and/or a glaze.
For glaze, mix together:
- 1/4 cup apple cider
- 1 cup powdered sugar
Pour / spread glaze over warm cake after removing from pan.
If a cinnamon-sugar finish is preferred, melt 1/4 cup butter. Spread over cake. Allow to sit for 1-2 minutes while mixing together 1/4 cup sugar and 1-2 tablespoons cinnamon. Cover cake with cinnamon-sugar mixture.
Another option is to finish with cinnamon and sugar and provide a bowl of glaze on the side.
