Chocolate Chip Cookies (Sourdough Discard)

  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 4 teaspoons cornstarch or arrowroot
  • 2 teaspoons coarse sea salt
  • 1 1/2 cups browned butter, cooled
  • 2 cups brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 1 tablespoon vanilla
  • 1 cup sourdough discard
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups milk chocolate chips

Combine dry ingredients and set aside.

Mix cooled butter and sugars. Add eggs one at a time until combined. Mix in vanilla and sourdough discard.

Mix in half of dry ingredients until just incorporated. Mix in remaining dry ingredients. Do not over mix.

Stir in chocolate chips.

Cover and refrigerate for 10 minutes.

Place balls of dough on parchment paper on baking pan. Bake at 350 for 12-14 minutes. Do not overbake. Cool on wire rack.
