- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 cup liquid shortening
- 2 cups cornmeal
- 2 teaspoons baking powder
- 2 eggs, slightly beaten
Mix dry ingredients together. In another bowl, mix liquid ingredients. Add liquid ingredients to dry ingredients. Have all ingredients at room temperature. Have a large skillet ready, well oiled and preheated to 450 degrees in the oven. Pour the mixture into the skillet. Return to oven. Reduce heat to 400 degrees. Bake 20 to 30 minutes.
