Honey Vanilla Ice Cream

  • 3 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup honey
  • 2 vanilla beans
  • 4 egg yolks
  • 1 tablespoon vanilla extract

In saucepan, heat cream, milk, honey, and vanilla beans over medium heat to hot but not boiling (about 5 minutes).

In separate bowl, whisk egg yolks. Slowly pour 1 cup of cream mixture over eggs, whisking constantly. Pour into saucepan with remaining mixture over medium heat. Whisk constantly until mixture thickens somewhat (about 5 minutes).

Pour through fine mesh strainer. Scrape vanilla bean seeds into mixture. Add vanilla extract. Cover and chill for 1 hour. Churn in ice cream machine to desired consistency.
