Cake Ingredients
- 1 yellow box cake mix*
- 3/4 cup butter, melted and cooled to room temperature
- 3 eggs
- 1 11-ounce can of mandarin oranges, including juice
Frosting Ingredients
- 1 3-ounce box of instant vanilla pudding
- 1 20-ounce can of crushed pineapple, including juice
- 8 ounces whipped cream or Cool Whip
Preheat oven to 350 degrees. Grease a 9″ x 13″ cake pan.
Blend together butter, eggs, and mandarin oranges. Add cake mix, and blend on high speed for 2 minutes. Pour into pan, and bake for 30-35 minutes. Cool completely.
Blend together pudding and pineapple. Beat until thick. Fold in whipped cream. Frost cake, and refrigerate.
This cake is best after several hours of refrigeration. It can also be assembled completely and frozen.
*Alternative ingredients instead of yellow cake mix:
- 2 1/4 cups all-purpose flour
- 1 1/4 cups sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
